They purposely choose black ink which requires more time and effort than a regular print, in order to retain the ‘hair cover’ texture. This process also makes the craftsman’s work difficult since it’s easy to get fingerprints on it.
This is the original reason why Tsubame-Notebook didn’t make notebooks with black covers for a long time.
